Gather all ingredients: sirloin steak cubes, baby potatoes, butter, garlic, olive oil, salt, pepper, paprika, onion powder, and parsley.

Place baby potatoes in a microwave-safe bowl with a splash of water. Microwave on high for 4-5 minutes until just tender. Drain and set aside.

Season steak cubes with salt, pepper, paprika, and onion powder. Toss to coat evenly.
Heat 1 tbsp olive oil in a large cast-iron skillet over medium-high heat. Add potatoes in a single layer and cook, undisturbed, for 3-4 minutes until golden and crispy. Flip and cook another 3-4 minutes. Remove potatoes and set aside.
