Preheat your oven to 375°F (190°C). Gather all ingredients: diced chicken, onion, garlic, black beans, corn, diced tomatoes, spices, cheese, and tortillas.

In a large oven-safe skillet (cast iron works great), heat olive oil over medium-high heat. Add diced chicken and cook until browned and cooked through, about 5-6 minutes. Remove chicken and set aside.

In the same skillet, add onion and garlic. Sauté until softened, about 2 minutes.
Return chicken to the skillet. Add black beans, corn, diced tomatoes with green chiles, chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine and let simmer for 2-3 minutes.
Remove skillet from heat. Stir in half of the shredded cheese. Top with tortilla strips, then sprinkle remaining cheese evenly over the top.
Transfer skillet to the preheated oven. Bake for 10-12 minutes, until cheese is melted and bubbly. If desired, broil for 1-2 minutes for a golden top.
Remove from oven and let cool for 5 minutes. Serve warm with optional toppings like sour cream, avocado, cilantro, and lime wedges. Enjoy!
