Pat the steak cubes dry with paper towels. Season with salt, pepper, and paprika. Toss to coat evenly.

Place potatoes in a microwave-safe bowl with a splash of water. Microwave on high for 3-4 minutes until partially tender. Drain well.

Heat 1 tbsp olive oil in a large cast iron skillet over medium-high heat. Add potatoes in a single layer. Cook undisturbed for 4 minutes, then flip and cook another 3-4 minutes until golden and crispy. Remove potatoes from skillet.
Add remaining 1 tbsp olive oil to the skillet. Sear steak bites in a single layer for 2-3 minutes per side until browned. Work in batches if needed to avoid overcrowding.
Reduce heat to medium. Add butter and minced garlic to the skillet. Stir constantly for 30 seconds until fragrant. Return potatoes to the pan and toss everything together to coat in garlic butter.
Remove from heat. Sprinkle with fresh parsley and optional red pepper flakes. Serve immediately.
