Double the avocado in this juicy grilled chicken recipe! Lime-marinated chicken topped with creamy avocado and tomato. A healthy, high-protein dinner ready in 30 minutes.
Ingredients
Instructions
In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper to create the marinade.

Add the chicken breasts to the marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

Preheat your grill to medium-high heat (about 400°F/200°C). Lightly oil the grates.
Grill the chicken breasts for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken has nice grill marks.
Remove chicken from the grill and let it rest for 5 minutes. Meanwhile, dice the avocados and tomatoes.
Slice the rested chicken breasts against the grain. Top with diced avocado, tomato, and fresh cilantro. Serve with lime wedges if desired.
For best results
- For best flavor, marinate the chicken for at least 30 minutes, but no more than 4 hours as the acid from lime juice can start to break down the meat.
- To prevent sticking, make sure your grill grates are clean and well-oiled before adding the chicken.
- Let the chicken rest after grilling to keep it juicy. Slicing too early can cause the juices to run out.
Variations
- Spicy Kick: Add 1/2 teaspoon cayenne pepper or a minced jalapeño to the marinade.
- Cheesy Finish: Sprinkle shredded Monterey Jack or cotija cheese over the hot chicken before adding avocado.
- Wrap It Up: Serve the chicken and toppings in warm tortillas with a drizzle of sour cream for chicken tacos.
